It’s light and very refreshing. I’ve had several friends try it. Very similar to Shock Top. Great aroma! They love it!
Ingredients
Procedures
- Peel and sanitize the citrus (I peeled and soaked in hot water)
- Puree all citrus, citrus is a natural sanitizer so I wasn’t worried about germs from that end.
- Add 2 liters of hot water to your Coopers fermenter. I recommend hot, not boiling.
- Mix in Wheat Beer Concentrate Kit, Dry Malt Extract, Sugar, and honey. Be sure to get all the ingredients well dissolved.
- Mix in citrus puree. There will be pulp flying everywhere. Don’t worry most of it settles out.
- Top up fermenter to 23 liters with cold water. You could go with 21 liters if you like. I used 23 liters to make it lighter.
- Cool to fermentation temperature (below 21°C/73°F) and add yeast. I pitched the yeast at 28°C because the initial water was too hot.
- Left in fermenter 8 days, took two Hydrometer readings to make sure fermentation was complete.
- At bottling time add one Coopers Carbonation Drop to each 12 oz/375ml bottle.
- Condition in bottle 2-4 weeks. (I conditioned for 9 days before I had to try it, Excellent!)

Just popped a liter bottle of this one...and it's even better after a good 3 weeks conditioning. Very smooth!
